Granola


I think this is probably not the healthiest of recipies (though that really was my intention); honey and sugar overkill perhaps, deliciously like toffee YES!

1 cup of oats
5 tbs flaked or slithered almonds, or any kind of nut you like
3 tbs sesame seeds
5 tbs sunflower seeds
1/2 tsp cinnamon
1/4 cup packed light brown sugar
1/2 cup runny honey
3 tbs butter

preheat the oven, now here is the bit that is tricky...my oven's thermostat is broken so i turn the knob somewhere between 100-120  degrees celcius which i think is anywhere from 120-180 it is very hard to tell, and i keep a very close eye on everything that i put in.
line two large trays with baking paper
mix the oats, nuts and seeds with the cinnamon in a bowl.
put the butter, honey and sugar in a small saucepan, and heat, stiring until the butter has melted.
pour the melted yummy stuff over the oat mixture and stir like crazy.
spread half the mixture onto each tray and press down then put the trays in the oven - it will all melt together and look like a giant anzac biscuit..after 10 minutes or so, take out the trays and run a fork through the mixture to break it all up, put the trays back in the oven swapping top to bottom and bake again til it turns a rich golden colour - take them out and break it up again, then turn the oven off and leave them in there with the door ajar til it is completely cool.

My big girl (who by the ways says she doesn't like nuts) takes the bigger chunks in her lunch box to school. I eat it with yoghurt and berries for breakfast.

This looks SO delicious! I'll have to alter the recipe because of our dietary issues, but I can't wait to try it!
